Mrs Casselman's Johnny Cake

Johnny Cake 2 Eggs 1/2 Cup granulated sugar 2 cups buttermilk 2 1/2 cups cornmeal 1 1/2 cups Flour 1 teaspoon soda 2 teaspoons cream of tartar Bake in shallow pan. Now, as the type of person that never bothers to keep fancy ingredients in her home, I will point out that I have learned that buttermilk can be made by combining milk with vinegar. Per cup of milk, add 1 Tbsp of vinegar or lemon juice. IMPORTANT- put the tablespoon of vinegar into the cup first, then pour in the milk to make it equal 1 cup. This way you won't end up with too much liquid for your recipe-. Let it stand 5 min before using. I think johnny cakes sound kind of like cornbread, but never having made either, it sounds interesting and like it might be nice with something in the gumbo or chili family.
